Miranda Kerr’s Banana & Tahini Bread Recipe 

Miranda recently visited Stockholm to celebrate the launch of our Turmeric Glow Drops. Hosting a mindful morning of yoga with Noni juice shots and a breakfast that included Miranda’s very own gluten-free Banana & Tahini bread with Pistachio and Coconut Spread

Banana & Tahini Bread Recipe (Gluten-Free) 

Prep Time: 15 mins 
Cook time: 45mins 
Total time: 1 hour 

Ingredients 

  • ½ cup olive oil 
  • 1/3 cup maple syrup 
  • 1/3 cup tahini 
  • 1 tablespoon vanilla paste 
  • 1 teaspoon cinnamon
  • 1 teaspoon cardamon 
  • 1 teaspoon salt 
  • 1 ½ teaspoon baking powder 
  • 2 teaspoon lemon juice 
  • 2 eggs 
  • 3 overly ripe mashed bananas (lots of brown spots) 
  • 2 cups of gluten free flour blend. Miranda uses Bob’s Red Mill Gluten-Free Flour, but any plain gluten free flour would suffice.  

Method 

  1. Preheat oven to 350 degrees Fahrenheit or (175 degrees Celsius). If necessary, grease your bread pan.  
  2. Mix together in a bowl, the olive oil, maple syrup, tahini, vanilla paste, cinnamon, cardamon salt and eggs.
  3. Then mix in your three mashed bananas.
  4. Sift in the gluten free flour and mix until combined. 
  5. Add in the baking powder and lemon juice, mix until combined. 
  6. Pour into a greased bread pan and bake for 45 minutes or until cooked in the middle (until a skewer/toothpick inserted into the center comes out clean).  
  7. Let the bread cool in the loaf pan for at least 10 minutes. You may need to run a butter knife around the edges to loosen the bread from the pan. Transfer to a wire rack to cool and then slice and serve.

Pistachio & Coconut Spread 

Miranda loves to pair the Banana & Tahini bread with a pistachio-coconut butter spread.  It provides a nutty yet sweet taste. Nuts like pistachios provide a rich source of healthy fats, protein, vitamins and minerals, making it a great addition to top your banana bread.  

Ingredients 

  • ½ cup of pistachio butter 
  • 2 tablespoon toasted coconut  
  • 1 tablespoon olive oil 
  • ½ teaspoon cardamon  
  • ½ teaspoon cinnamon 
  • Sprinkle of salt 

Method 

  1. Combine all ingredients in a bowl until desired texture and spread.
