This refreshing drink can be served in glasses over ice, or shaken with ice, and then strained into glasses. It’s great for a little afternoon pick-me-up, or wonderful to share with friends and family, for a healthy celebration drink.
TIP We have used sparkling mineral water yet you can also use sparkling apple juice or a lemon/lime sparkling juice to create this light and refreshing mocktail.
NOTE You could add approx. 15-30mls (per drink) of vodka, rum, tequila or gin to make this into a yummy cocktail too.
Serves 4 (double the recipe as needed)
Prep Time 10 – 15 minutes
Ingredients
- 2 cups light-coloured sparkling lemon-lime (or sparkling apple juice)
- 2 tbsp lime juice (to taste)
- 1 – 2 tbsp agave syrup or maple syrup (or simple syrup)
- ½ cup sparkling water or soda water to finish mocktail (optional)
- Fresh mint leaves
- Lime circles (or wedges)
For Serving
- Lime juice and caster sugar (or xylitol) for rimming the glasses (optional)
- Mint leaves

Method
1. In a glass jug/pitcher or large jar mix all the ingredients together with some ice and stir well to chill. It also helps to chill all the ingredients before making the drinks.
2. A few minutes before you are ready to serve the drinks rim the glasses with the sugar or xylitol, if using.
3. To rim the glasses, pour a little lime juice on a flat plate and spread around a little. On another small plate place 2 – 3 tablespoons of caster sugar (or xylitol) and spread around a little. Then dip the rim each glass in the lime juice just a little and then into the sugar creating a festive rim Repeat until all the glasses are done and set aside.
4. Add a little ice, fresh mint leaves and lime circles to the glasses and pour over the drink mix. Top up the glasses with a little more sparkling water or soda water, if desired. Server in your favourite glasses or in Martini glasses and strain out ice before serving, if desired.
