Chocolate & Coconut Torte with Chocolate Rose Glaze by Chef Kate

This torte is a favourite of Miranda’s and I made it live on Australian TV for the wonderful morning show, Today with Lisa Wilkinson and Karl Stefanovic. We all love sweet treats, and these are not only delicious, but they are made with nutritious, healthy ingredients that make eating them a guilt-free pleasure. The ingredient list is a bit long and so is the method, but it is really easy to put these together and you’ll be really happy you took the extra time when you taste them!

I’ve update this recipe since the show to include one of my all-time favourite Young Living Culinary Oils…ROSE!It’s beautiful used in deserts and drinks, but a little goes a long way so start with 1 drop and add a little more if desired.

NOTE The chocolate rose glaze is so good that you will probably want to double the recipe. It’s great for dipping fruit in and also makes a really nice, warm topping for ice cream or stirred into yoghurt.
For a special dessert, place a piece of the torte base in a bowl or ‘fancy’ glass and top with ice cream or coconut ice cream and a little warm chocolate rose glaze, a few toasted walnuts, toasted coconut, and organic rose petals or fresh petals.

SERVES 8 –10

PREP TIME 20 minutes

BAKING TIME 15 minutes

Torte Base Ingredients

    • 2½ cups coarsely ground walnuts
    • 2½ cups coarsely ground, shredded, or desiccated coconut
    • ½ cup honey or coconut syrup
    • ¼ cup melted coconut oil
    • ½ tsp sea salt (to taste)
    • 1 tsp vanilla extract

Chocolate Rose Glaze Ingredients

    • 1 cup raw cacao powder
    • ½ cup honey
    • ¼ cup melted coconut oil
    • 2 tbsp coconut milk
    • 1 – 2 drops of Young Living Rose Oil (to taste)

Topping Ingredients

    • ¼ cup toasted, shredded, or desiccated coconut
    • ½ cup chopped toasted walnuts
    • Organic dried rose petals (optional)

1.        Preheat oven to 350F/180C and prepare a medium-sized rectangular baking pan by generously rubbing with coconut oil or lining with baking paper. You can also use a round pie dish, spring form pan (lined with baking paper), or several individual little baking dishes.

2.        In a large mixing bowl or electric mixer, combine all torte base ingredients together well. Then evenly press the mixture into the prepared pan, place in the oven, and bake for approx. 15 minutes or until golden brown and you start to smell toasted coconut. Be careful not to burn. You may need to cover the pan with foil for the last few minutes. Remove from the oven and let cool for 15 minutes.

3.        Meanwhile, make the chocolate glaze while the torte base is baking. Place the honey, coconut oil, and coconut milk in a medium-sized pan on medium heat and cook while stirring continually until everything is combined, melted, and very warm, but not boiling.

4.        Remove from heat and whisk in the cacao powder. Continue stirring until the mixture is well combined and silky smooth. Then add the Young Living Rose Oil and whisk to combine. The glaze needs to be warm to spread on the torte.

5.        When the torte has cooled, spread the warm Chocolate Rose Glaze all over the top of the torte and smooth a little. Then evenly sprinkle with toasted coconut, toasted walnuts, and dried rose petals.

6.        Refrigerate for at least 30 minutes to set the chocolate or serve immediately while the glaze is still warm. Cut into pieces before serving. Place in an airtight container and refrigerate for up to 5 days or freeze for up to 1 month; just thaw before serving.

February 3, 2017 launches the Chinese New Year of the Bing You or Fire Rooster. Within the Feng Shui of your space there are stars or energy patterns that show up in each sector. The goal is to activate the good stars and keep the bad ones quiet. How to do this? Use the auspicious sectors more often. It’s like tuning into the wi-fi signal and receiving a full ban. The more often you are in these areas the more you attract good Qi into your life, which in turn make you happier, healthier and more successful. Who doesn’t want that?

What to do?
Take your compass and stand in the middle of your house. Map out the sectors according to the pie-shape of the directions. The three best sectors to activate and use more often in 2017 are:

EAST – attracts wealth, finance & cash flow
SOUTHEAST – attracts happy events, promotions & sales opportunities
NORTH – attracts power, authority, good name & leadership

Here are the good sectors to use:

EAST is one of the top 3 sectors to activate in 2017. Use it more to maximize wealth prospects and accumulation and good fortune. If your main entrance faces EAST you are in great shape for 2017 because it ushers in this auspicious energy. If one of the rooms you use most often or your office is in the East it helps you establish a good reputation to flourish in professional pursuits.To activate use this area more, open windows, add yang objects like a television, clock or fan.

SOUTHEAST is the second best sector to activate to grow your wealth especially for long-term projects and investments. It increases sales and is also a great sector for spiritual manifestation in 2017. If SOUTHEAST is where your home office is located you will find yourself more active in business. Using SOUTHEAST will boost your career and you will be more joyful as you gain more fame and reputation. If you are in a relationship SOUTHEAST will help you plan marriage or start a family.

NORTH is the third best sector of 2017. This area is good for education and if your purpose is to learn you can turn your knowledge into a career. Study in the NORTH this year and set your children up in the NORTH for their study area. It also manifests career opportunities in 2017. Use it to climb the corporate ladder and to build a good name and status. If the main door to your office is in the NORTH your status and social circle will improve. Make sure there are no negative aspects in this sector or you will get undesirable results

If You Can See It, You Can Have It in 2017

I like to think of 2017 as an open book. Why not call it a celebration of YOU? The first page starts on January 1st. It is your journal, and what if you knew that the words you write could take form. Imagine that?

We all want to celebrate our life. But verbal affirmations like, “Every day I will lose weight,” or “My house is clean and tidy” just don’t cut it. To lose weight, drink less or catch a date, you may need the right actions to do the trick.

What do you crave? A new home, or baby, or a closet filled with Dolce & Gabbana? Whatever it is, then it’s time to rewrite your story and in the present. Whenever you live in this moment, making the most of it, time and again, you’re naturally at your most powerful, most capable, most alive.

Lilly is from Los Angles and wants to get married. She’s single, depressed and “filled with flaws” – or so she believes. Lilly has spent the last seven years pining for a huge wedding day, but now she’d be grateful for a Vegas bash. Lilly is dateless, overweight and feeling clueless how to bring in her beau. Her New Year’s resolution is to lose weight, but her secret desire is to get married.

First, I asked Lilly to talk about marriage and what it means to her. She gave me a solemn look. She said, “I just want to share my life with someone special.” Her eyes were lifeless. Her words monotone. For Lilly, life had taken its toll.

Lilly looked to me to help her lose weight. What she needed was an out of the box approach.

Like all brides who try on gowns, I knew she’d love to see herself in one of them.

After all, beauty is about the way you move, and express yourself.

“Be patient and find that one-of-a-kind dress you’ve always imagined yourself wearing,” I told her, “Enjoy the daydream of becoming a bride.” And take a close friend with you for support.

At first, she was hesitant to do this. ”I’m too fat,” she said, “Nothing will fit me.”

I gave her a gentle nudge. “Make sure to feel the finish of the fabric,” I said. “See the glowing potential of you.”

Lilly’s adventure was a success. And her feedback was everything I hoped for. Her eyes brimmed with joy. She experienced a mystical ecstasy. For the first time, she knew what it would feel like to be a bride.

“I am going to lose 20lb and start dating.” She said.

Lilly had wanted to lose weight for a bigger reason – to get married. But to achieve her goal, she needed a more tangible motivator. Taking ACTION to explore what it would feel like to be a bride created a cycle of energy to propel her forward. And that was a grand motivator for her to lose weight.

We all have wants and desires, but we rarely listen to our hearts. By physically experiencing the thing you want and in real time, your mind will believe that you already have it. Take a chance on something you want, through a door that you’ve never opened. Go for something heartfelt. Make it bigger!

If your house is a mess, maybe it’s because you secretly want to redecorate. So, to motivate you, why not view a luxury penthouse interior? “I can’t afford it, so what’s the point?” you say to yourself. But it might be just the push you need to redesign or de-clutter your home.

If you want that wardrobe filled with Dolce and Gabbana? Get dressed up, take yourself out and try on everything in their store. Fall in love with the feeling of wearing the clothes – imprint the image into your mind. And, if you’re looking for love? Date yourself, take yourself out to that restaurant with a close mate, buy yourself flowers. Light those candles and smile.

In other words, by stepping out with a kick-starting motivator is a good way to inspire a goal you’ve been putting off for years.

There’s nothing more exciting than a glimpse of the future. If you can see it, you can have it!

It all starts by making 2017 a year of celebration for you.

A Sultry Soft Smokey Eye – Lisa Storey


Working with Miranda on many shoots, sometimes back-to-back days and occasionally two shoots in one day, I can see how her approach to health with organic choices really take effect. Her diet and using KORA Organics products keeps her skin healthy and balanced, and her energy consistent. I’m often curious of what food she brings to work, it’s always delicious, healthy on the go nutrition… that makes the long hours and need to remain energized much easier.

The make up looks can go in any direction… a sultry soft smokey eye like the one we created for the Swarovski campaign still looks fresh and bold even at the end of the day with Miranda’s eyes naturally sparkling through.

For this look I applied a peach gold (Tom Ford Cream and Powder Eye Color) on the lid and inner lower edge of the eye then a bronze to the outer eye, shaping and contouring to lift the eyes up. Next with a powder shadow (Tom Ford eyeshadow quad in Cognac Sable) I blended outwards to create the soft smoky effect. Chanel precision eyeliner in Amber on the inner lid and lashing of mascara completed the look.

I use my hands as a palette and am constantly cleaning them off so I always have KORA Organics Daily Hand Cream with me to nourish and replenish them after continual cleaning. At times I can get eczema (a type of dry skin) on my palms from using artificial hand soaps and detergents (when out and about) but I use the healing and protective KORA Organics Daily Hand Cream as my go-to treatment, knowing I can touch faces, prepare food etc. without the worry of having anything other than organic on my skin.

Miranda’s In-flight Skincare essentials


Travelling for work can take a harsh toll on your skin with air conditioned cabins causing your skin to become dehydrated. Here I share my in-flight skincare essentials to ensure you land looking fresh and glowing.

First I remove my make up with KORA Organics KORA Organics Cream Cleanser to gently remove all the dirt and grime while at the same time nourishing the skin. I then apply KORA Organics Hydrating Mask to clean, rehydrate and invigorate my complexion.

Spritzing my face during the flight with either my KORA Organics Balancing Rose Mist or KORA Organics Calming Lavender Mist to balance the pH level in my skin while also soothing and hydrating.

Next is an added boost of hydration with the KORA Organics Luxurious Rosehip Oil, a powerful treatment oil which is rich in antioxidants and essential fatty acids to deeply moisturise and protect my skin.

An eye cream is essential to prevent you from looking tired just in case you didn’t get that much-needed beauty sleep. Applying the KORA Organics Recovery Eye Gel Cream which contains Aloe Vera will help to assist to cool and soothe, tired puffy eyes.

Some other things I carry on board with me include a silk eye mask to ensure I get some beauty sleep while I’m on the flight, a scarf so you can add a few layers or take it off so you can be flexible adjusting to the temperature. I also remember to hydrate from within by drinking lots of water and herbal teas.

Just before I touch down I will spritz my face with KORA Organics Energising Citrus Mist to brighten my complexion and just to give me that boost of energy by taking in the aroma of the citrus scents, I’ll apply KORA Organics Tinted Day Cream as it’s a lighter alternative to foundation, and then apply KORA Organics Vitamin Enhanced Lip Balm to my lips.

It’s a lot of work, but it ensures I disembark looking and feeling fresh.

A Simple Fresh Faced Beauty Look by Lisa Storey


I have worked with Miranda on many different types of shoots and commercials and every time I am reminded of her approach to beauty, from not only what you put on your skin, but what you put in your body and how you feel contributes to how your skin looks. Nutty Quinoa Pilaf by Chef Kate


This flavourful, crunchy pilaf is wonderful served as a side dish and with curries. You can add other finely chopped or grated sautéed veggies like zucchini, carrots, and sweet potato if you like. I usually make a large batch of quinoa at the beginning of the week to use in recipes all week long. It’s great to have on hand to add to soups and salads.

NOTE For this recipe you’ll need 4 cups of cooked quinoa. You will need 2 cups uncooked quinoa, 4 cups of water, and a little salt. Try using assorted colours of quinoa. You can find them at your health food store.

MAKES approx.6 generous cups

PREP TIME 15–20 minutes

COOKING TIME 15 minutes (add 20 minutes if cooking quinoa)


  • 4 cups cooked quinoa
  • 2 tbsp coconut oil, ghee, or butter
  • ½ cup each finely chopped onion and red bell pepper (capsicum)
  • 4 tbsp mixed finely chopped parsley, mint, and cilantro (coriander)
  • ½ cup shredded or desiccated coconut
  • ¼ cup each pumpkin seeds, sunflower seeds, and sultanas
  • 2 tbsp maple syrup or honey (to taste)
  • 1 tsp sea salt (to taste)
  • Freshly ground pepper (to taste)
  • ½ cup pomegranate seeds or goji berries (optional)
  • Method
    1. In a large sauté pan or pot, heat the oil over medium/high and add the veggies and herbs and cook while stirring for approx. 3 minutes or until tender. Then add the shredded or desiccated coconut, seeds, and sultanas, and continue cooking while stirring for 2 minutes.
    2. Add the cooked quinoa, maple syrup, salt, and pepper and reduce the heat to medium. Cook while stirring until the quinoa is heated through, and remove from heat. You may need to add a little more oil or a little water while you are cooking so it does not stick or burn.
    3. Check for seasoning and add a little more salt and pepper if desired. Sprinkle with pomegranate seeds or goji berries, microgreens, and fresh herbs. Serve hot or chill and serve as a cold dish.

The Subconscious Secret to Realizing Your Goals by Suzannah Galland


What happens in your dream time is manifested in your daytime, and the words you write and the scenarios you set can help you design your achievements.

Signs and symbols in dreams may serve as warnings or as intuitive guidance. They allow you to tap into what’s going on beneath the surface or to pave the way for your next move.

Pay close attention to your dreams and your subconscious mind. Keep a notepad or iPad beside your bed and try to recall anything and everything about a particular idea you had – players, scenarios, colors, sounds and words.

Put your aspirations in writing:
Write out exactly what you are trying to manifest. Pick something small, but you must be passionate about it!!
You can use this as a tool to rejuvenate you, as a means to help you understand how to express an intention or desire. By seeing yourself acting it and observing you as a player, you can start to create your future.

If it’s a new job you want, write or imagine a scenario where you’re working for a company that values you with an excellent salary, a high position, benefits and anything else of crucial importance.

If it’s a relationship, see yourself acting out the role of dating someone who makes you laugh, is generous and excites you. If you want commitment, then write out that information for the character.

If you’re feeling creative, find a name for the person, company or event; or if you prefer, call the players A, B, C or number them or whatever. The goal is to see ourselves in the roles we want or desire with other people indulging to our needs.

Now, read what you just wrote out a few times a day, but especially before you sleep. You may find yourself a week later quietly asking, why isn’t anything happening? Go back and read your story. Is there enough information written out? Do you need to add a couple of characters to support you along the way?

Yes, I know most of us think this is a lot of work, and we are all busy and what-not. But your life is about you. How you think, act, react and manifest are all performed and written by you. Write it out and let your intuitive body and mind draw it to you.

Sometimes, dreams don’t manifest themselves exactly as we might have planned, but they can lead us to another place in another area of our lives, and we can link the dots in a way we never anticipated.
